@SunnJax Do you know that authentic ( hard to find for its too high cost ) Italian pesto would be made with only basil ( that you have ), pine nuts ( and NO other nuts/replacements/etc ) , Pecorino cheese, olive oil, salt ? I think there's debate if some garlic should go or not but "what makes really difficult to make it traditional" are the pine nuts, they cost an arm and a leg that's why they get usually replaced by other nuts.
@gilesgoat Yeah, I canβt afford pine nuts and I like cashews, so basil-cashew works for me. βΊοΈ
@SunnJax Yeah I heard people using "all sort of things", from cashews to walnuts to almonds to a mixture of everything. I think the most important factors are the olive oil and the fresh basil, I see you kept it 'firm' in your pic, normally in Italy it would be 'a bit more fluid with more oil", but could be a way 'to make it last more by diluting it a bit' π Do you know the original recipe of "trenette al pesto alla genovese"? It involves cooking pasta with green beans and potatoes.
