@yo @gilesgoat we had a couple of slices of that tomato bread with the Spanish omelette. The guy who bought me lunch was explaining about the "onions/no onions" divide with regard to the omelette.
@llamasoft_ox @gilesgoat Yep, I'm team no-onion (and the egg should be lightly cooked/nearly runny). But I think Spanish omelette is the exemplary Spanish dish. It's the cheapest, simplest, and most plentiful materials available (egg, potato, olive oil), yet it's delicious. Unbeatable VFM in a traditionally poor country.
(Unfortunately, if you don't have access to a cooking grandmother, you can't really get the full experience, but bar omelettes can be pretty good.)
@yo @gilesgoat ours was lovely this lunchtime, although my host did say the egg could have been a bit looser and I would not have minded that, as I do love a loose egg. But yeah fantastic dish, I love egg and I love potatoes so it's a big win. No onions today, and we agreed that perhaps onions would obscure the taste of truly excellent eggs.
